The recipe for yeast bread prepared in accordance with the requirements of the Dukan diet involves the use of dry yeast. The result is fluffy, porous bread that is healthy and tasty to eat at any stage of the Dukan diet, including Attack.

Ingredients:

  • wheat bran – 30 g;

  2. After 10 minutes of infusing kefir, combine it with flour, isolate, salt, and baking powder. Add spices if desired.
  3. Mix the dry crumbly mass with beaten eggs and mashed cottage cheese.
  4. Place the dough on the bottom of the pan and wait 40 minutes to rise.
  5. Bake for half an hour at 180 degrees.

Today, many people prefer not to buy certain products, but to cook them at home. This also applies to bread. Among my friends and relatives there are people who are passionate about baking. Someone uses a bread machine for this, which does everything itself: it kneads the dough and calculates the amount of ingredients.

There are also those who have mastered the technique of making bread with their own hands from scratch, stock up on sourdough and spend several days to end up with a tasty and healthy loaf of bread. I admit, I don’t know much about baking yet, but I’m just getting acquainted with this science.

I don’t have a bread machine, and I haven’t mastered complex techniques yet. But I still want homemade bread. Moreover, it should preferably be yeast-free and dietary. I managed to find one of these recipes - I’ve been making bran bread without flour for several months now.

What is most pleasing is that the process of preparing such bread takes no more than 20-30 minutes. In addition, bran bread is healthy and dietary. Just what you need! The recipe is known as Dukan bread, the only difference is that according to Dukan, it is recommended to use a sweetener instead of sugar.

Well, for me, you can generally get by with just a pinch of salt as a flavor enhancer.

Bran bread

For quick bran bread you will need

  • 2 eggs,
  • 3 tbsp. spoons of soft cottage cheese,
  • 5 tbsp. spoons of oat bran,
  • 3 tbsp. spoons of wheat bran,
  • 1/4 teaspoon baking powder,
  • salt, sugar to taste.

Break the eggs into a bowl convenient for mixing products and beat them a little with a whisk.

Add oat and wheat bran to the beaten eggs. They should be medium or finely ground.

Using a fork or whisk, thoroughly mix the eggs with bran so that there are no lumps left. You can use a blender, although there shouldn't be any problems at this stage.

Now add soft cottage cheese, baking powder, salt and sugar to taste. Instead of sugar, you can use a sweetener for an even more dietary option. At this stage, you can also add any spices and make the bread fragrant. Sometimes I add dried garlic, dill, sesame or anise.

Mix all ingredients well again. Let the flourless bread dough stand for 3-5 minutes, and during this time you can preheat the oven to 180 degrees.

We transfer the mixture into a mold, I use silicone. Since the bread is prepared very quickly and without hassle, I make a small portion for 1-2 times. In my form, the bread turns out to be short, if you want it to be fuller, then take a smaller form or increase the amount of ingredients.

Place the mold in a preheated oven at 190 degrees. oven for literally 20-30 minutes. You can tell when it’s ready by its elastic, golden crust. Let the finished yeast-free baked goods cool and you can try it!

The good thing about a bread maker is that it easily copes with kneading dough. You will need eggs (4 pcs.), milk (100 ml) and soft cottage cheese (120 g). You also need bran (200 g), sugar substitute (2 tablets), salt (3 g), dry yeast (5 g).

The Dukan microwave bread recipe presented below can be used starting from the Attack stage. Salt the egg, beat, add cottage cheese (20 g) to the resulting mass, mix. Mix baking powder (0.5 tsp) with ground fiber (take 25-30 g of oat bran, and half as much of wheat bran). Combine both masses. Place in a silicone, ceramic or glass mold. Leave for a quarter of an hour. Bake in a microwave oven at full power for about 4 minutes.

Prepare baked goods from oat and wheat bran (6 tbsp and 3 tbsp respectively). You will also need COM, starch and isolate (60 g/15 g/30 g). Amount of salt – 0.5 tsp. and baking powder – 10 g. Amount of water – 175 ml. Additionally, use “zero” milk – 40 ml.

Dissolve baking powder in a mixture of water and milk and salt the liquid. Mix the dry substances, add liquid and knead well. Bake in a microwave-safe pan for 5 minutes (maximum level). Divide the resulting product over 3 days (store in the refrigerator).

Take 2 tbsp. “zero” kefir, a chicken egg and 20 g of soft curd (low-fat product). The recommended amount of oat bran is 25-30 g, and wheat bran is half as much. Add soda sparingly – 0.5 tsp is enough. but you can increase the rate to 1 tsp. (quench it with lemon juice).

Place all dry ingredients in a bowl, dilute with egg-kefir mixture. Leave it for a while. Bake for 5 minutes at full power.

Cooking in the microwave

In addition to the method of cooking in a slow cooker, there is a recipe for bread that is cooked in the microwave. To do this you need to take:

  • one egg;
  • 2 tbsp. spoons of oat bran;
  • 1 tbsp. a spoonful of wheat bran;
  • 1 liter of curd mass;
  • half a pack of baking powder.

Traditionally, the bran is ground into flour. Then the remaining components are added and the whole thing is whipped using a mixer. It is better to bake bread in the microwave in a special form. This will give the baked goods an attractive appearance. Cooking in the microwave will take no more than 10 minutes. Eat delicious bread baked in the microwave, preferably when cooled.
