Diet cutlets allow you to lose weight deliciously

Subtleties of technology

First of all, we suggest that you familiarize yourself with the recommendations of experienced chefs. Armed with this knowledge, even a novice housewife can prepare delicious steamed fish cutlets.

  • Minced fish prepared by yourself will be tastier than ready-made fish. After all, you won’t put anything extra in it, using only fish fillets. For minced meat, take fresh and not too bony fish. If you are going to make cutlets from river fish, turn its flesh through a meat grinder several times to be sure that there are no bones in the minced meat.
  • Usually butter or lard is added to make minced fish juicy, but these additives significantly increase the calorie content of the finished dish. Therefore, dietary cutlets are made without these additives, but it is worth choosing fish varieties that are not the driest.
  • To make the fish cutlets softer and more fluffy, dried bread is added and then soaked in milk, cream or water. For diet cutlets, water is more suitable, or in extreme cases, milk, but it is better to avoid cream.
  • In order for the cutlets to retain their shape, eggs are usually added to the minced meat. However, you can also make lean cutlets by replacing the egg with starch, potatoes or semolina.
  • Onions are often added to fish cutlets. You should not put it through a meat grinder so that the minced meat does not become liquid. It’s better not to be lazy and chop the onion with a knife.
  • Usually, cutlets are steamed using a double boiler or multicooker. But even if you don't have such kitchen equipment, you can make steamed fish cakes by placing them in a colander and placing it over a pan of water.
  • To steam cutlets, you don't need any oil or breading. This also makes them dietary.

Based on the above rules and tips, you can prepare delicious steamed minced fish cutlets using any of the recipes you like.

Tip: if you cook cutlets in a multicooker, you can simultaneously cook a side dish in the main bowl of the unit. It could be rice, buckwheat, corn porridge, lentils.

Which fish is best to make fish cutlets from?

Fish is a protein product. It contains few carbohydrates, in most types none at all. Fats are mainly represented by polyunsaturated fatty acids that are beneficial for the body. Particularly valuable substances are Omega-3, 6, 9, and vitamin D. If you are on a diet, you should not be afraid of these fats, but ignoring fat and calorie content is also wrong.

For example, salmon cutlets will not turn out to be dietary, since the calorie content of this fish is 219 kcal with a fat content of 15.1 g. If you are going to prepare salmon cutlets, it is better to choose a very light side dish for them. Stewed or seaweed will do. Boiled buckwheat or lentils are appropriate, but in small quantities.

It should not be very fatty - flounder, cod or pollock would be good, you can also use pike perch or bream. Some people prefer to make minced meat by passing the fish through a meat grinder several times to obtain a more uniform consistency; others, on the contrary, do not recognize fish cutlets for which the fillets have been ground in a meat grinder, and chop it manually with a knife until the desired consistency is obtained. This is purely a matter of taste and habit.

It should only be noted that minced meat prepared using a meat grinder will cook faster and will not have a pronounced fishy taste. You can add a little fatty sea fish (trout, salmon or salmon) to the prepared minced meat. In this case, there is no need to add additional oil. Dietary fish cutlets are baked in the oven (without breading), or cooked in a double boiler. Both methods are well suited for preserving all useful nutrients.

Recipe 7: cod fish cutlets with kefir in the oven

If you're wondering what to cook with fish fillets, take a look at cod fish cutlets (recipes). Delicious! The step-by-step recipe describes in detail the process of their preparation. The recipe for cod fish cutlets with a photo in the oven is given below.

  • cod – 800 g or cod fillet – 500 g;
  • semolina – 100 g;
  • kefir – 150 ml;
  • egg – 1 pc.;
  • onion – 70 g;
  • breadcrumbs - 3 table. spoons;
  • vegetable oil – 30 ml;
  • salt;
  • spices.

Prepare all necessary products. The easiest way is to use fish fillet, but if this is not possible, then you can use a whole fish. Kefir is suitable for any fat content. It is best to take refined oil. To flavor the dish, you can use either a mixture of several spices (ground black or red pepper, turmeric, coriander) or ready-made seasoning for fish.

This is a recipe for cod fish cutlets without bread, so semolina is used as a binder in the minced meat. It must be prepared first: pour warm kefir and mix thoroughly so that there are no lumps left. Leave the semolina to swell for about half an hour.

If you are using whole fish, you will first need to skin it and separate the fillets from the bones. This can be done in several ways. The first is to simply cut off the skin and remove the pits. At the same time, fish pulp remains on the bones, so that fish soup can be cooked from them later. The second way is to lower the fish into boiling water for 3-4 minutes. After this, both the skin and the seeds separate quite easily. This recipe used the second method. You also need to prepare the onion: peel it and finely chop it.

Then you need to fry the onion in a small amount of sunflower oil. Fish fillets must be passed through a meat grinder or chopped using a blender. Then beat the egg into the minced meat, add salt, spices, prepared semolina and fried onions.

Sprinkle breadcrumbs onto a board or flat plate. Taking about two-thirds of a tablespoon of minced meat, roll it into a ball, roll it in breadcrumbs, then give the workpiece an oblong shape.

All that remains is to bake minced cod cutlets with semolina in the oven. To do this, you need to preheat the oven to 180 degrees. Grease a baking tray with sunflower oil and place the formed pieces on it. Bake them for 20 minutes, then turn them over to the other side and bake for another 15 minutes.

After this, the dish is ready to be served. It goes well with any side dish.
