Dietary cottage cheese casserole - general principles of preparation

The main ingredient is cottage cheese. If you are on a diet, it is better to use a low-fat curd product.

Before preparing the dough for casserole, it is first rubbed through a sieve or crushed with a blender/mixer.

Eggs will give the curd mass stickiness and, when baked, a golden crust. But you can do without chicken yolk.

Thanks to vanilla, the casserole will turn out to be aromatic at home.

You can add sugar or its substitute for taste.

Depending on the chosen recipe, semolina or rice cereal, raisins, berries, fruits, carrots, sour cream, and even pasta are added to the casserole.

When serving, the dish can be topped with honey, syrup, yogurt, jam or hot chocolate.

Weight loss and cottage cheese

Cottage cheese is indispensable for weight loss, because it is a low-calorie source of pure protein ! That is why dozens of diet options have been developed for weight loss, where the main product is cottage cheese.

The main qualities and advantages of any such cottage cheese diet:

  • weight loss for any degree of obesity;
  • getting rid of puffiness;
  • excellent hunger quencher;
  • positive effect on metabolism;
  • normalization of digestion and intestinal function.

All nutritionists strongly recommend, if not a cottage cheese diet, then consuming only fermented milk products throughout the day at least once a month.

This approach to nutrition is especially praised by athletes, since cottage cheese helps to gain muscle mass and reduce fat cells in the body. Many bodybuilders always eat 300-400 g of cottage cheese after training. There are also famous diets made with cottage cheese, for example, Maggi with cottage cheese. For those on a keto diet, high-fat cottage cheese is generally the predominant product.

Naturally, there are also negative reviews about the cottage cheese diet on the Internet, but here two reasons for the indignation can be distinguished:

  1. The diet for taking this fermented milk product or consuming foods containing high amounts of carbohydrates and fats is incorrectly calculated.
  2. There are medical contraindications for consuming dairy products.

Since not everywhere this fermented milk product can be found of decent quality, sometimes the question arises, what to replace cottage cheese in the diet with? It can be replaced with low-fat kefir or, best of all, boiled chicken. There is almost no fat, but a lot of protein.

Benefits and nutritional value

Cottage cheese has many beneficial properties that have a positive effect on the human body.

This is a treasure trove of protein and calcium:

  • reducing the likelihood of caries;
  • improvement of bone tissue and vision;
  • lowering cholesterol levels;
  • increase in hemoglobin.

Based on fat content, this fermented milk product comes in the following types :

  • fatty – more than 18%, calorie content from 223 kcal;
  • classic - from 4 to 18%, calorie content - from 121 kcal, 100 g of cottage cheese with 9 percent contains 16.7 g of proteins, 9 g of fat, 2 g of carbohydrates and 159 kcal;
  • semi-bold (low-fat) – from 1 to 4%, from 100 kcal;
  • low fat (diet) – 0% contains 83 kcal.

What kind of cottage cheese helps you lose weight

Which cottage cheese is better to choose for weight loss? For weight loss, skim milk made from cow's milk is best. A diet using homemade cottage cheese is also possible, but you need to remember that even though such a cottage cheese product is considered natural, it is higher in calories.

Goat is least suitable for diet. Although it contains more calcium, it is higher in fat and calorie content. Therefore, preference should be given to cow milk.

There are 2 types of such fermented milk product:

  • acidic - prepared from skim milk with the participation of lactic acid bacteria;
  • acid-rennet - created not only with the help of bacteria, but also with the obligatory addition of pepsin (rennet enzyme).

When we talk about cottage cheese, you need to understand that this is cottage cheese, and not curd cheeses, masses, etc. The composition of curd cheeses and mixtures includes sugar, butter and sour cream. They contain a high amount of fats and carbohydrates. For example, 100 g of curd mass is 7.1 g of protein, 23 g of fat, 27.5 g of carbohydrates and 340 kcal.

For a diet, it is better to prepare curd mass at home (homemade fermented milk product, vanillin, rum essence, natural sweetener), then you will know exactly how many kcal are in the product.

Contraindications and features

Like any product, cottage cheese has its pros and cons . Abuse may lead to side effects. Doctors advise eating no more than 200 g per day, otherwise salt imbalance may occur.

Also, the cottage cheese diet should not be consumed by people with the following diseases :

  • allergies;
  • kidney and liver diseases;
  • diseases associated with high stomach acidity;
  • disorders of the digestive tract;
  • cardiovascular pathologies.

For pregnant and lactating women, this dairy product, on the contrary, is very useful, but in moderation.

Dietary cottage cheese casserole without eggs

The casserole according to this recipe is prepared without eggs. Pour maple syrup or low-calorie hot chocolate over the finished dish.

Ingredients:

• Fine-grain or mashed cottage cheese;

• 20 grams of corn starch or dry pudding;

• One tea. spoon of lemon juice;

• Sugar substitute.

Cooking method:

Cottage cheese is mixed with starch or pudding, lime or lemon juice is added. Stir until no lumps remain. Add a sweetener. The curd mass is transferred to a high silicone mold. Place in the microwave for six to seven minutes at maximum power. After this, the dessert is put into the freezer for 10 minutes. After easy hardening, cut into portions and pour over syrup.

Making casserole without flour:

  1. To prepare the casserole, you need to take three packs of cottage cheese with a fat content of about 1%. Since I didn’t have such cottage cheese, I used 2 packs of low-fat cottage cheese and one pack of 5% cottage cheese. Having made simple calculations, the result was cottage cheese with 1.6% fat content.
  2. Separate the yolk from the white. Add only yolks and 3 tablespoons of sour cream to the cottage cheese.

  3. Beat the curd mass with a mixer or blender until smooth. Our task is to grind the cottage cheese as well as possible so that the lumps disappear.

  4. In a separate bowl, beat the whites until stiff peaks form. In order for the whites to beat well, the dishes must be absolutely clean and dry, and the whites must lie in the refrigerator for 20 minutes before whipping.

  5. Next, you need to carefully add the whipped protein mass into the curd mixture and mix.

  6. Sort the raisins, remove the stems and add hot water for a few minutes. Drain the water, dry the dried fruits with a towel and transfer to the curd dough. You can use any other dried fruit of your choice.

  7. It is better to use a silicone baking pan; it must be greased with vegetable oil. We pour our future casserole into it and place it in an oven heated to 180 degrees. Bake for 25-30 minutes.

  8. After cooling, place the finished cottage cheese casserole on a dish. Sprinkle powdered sugar on top.

The casserole can be served cold or hot. Bon appetit!
