Baldanova, Irina Makarova (and in her marriage, Sakharova) went to the north of the Caucasus, accompanied by her partner Vasilyev, to discover the secret of making kefir. But before this secret was revealed, the Karachai prince Bekmurza Bakchorov fell in love with the girl. Makarova and Vasiliev stayed in his mansion for a whole month, traveled around the villages and tried to get kefir grains. But their efforts were in vain. Desperate, the researchers decided to go home, but their way was blocked by horsemen who kidnapped Irina. She came to her senses in an unfamiliar hut, when Bekmurza was already standing next to her with a lush bouquet of flowers and offered to become his wife. But it was not there! Vasiliev turned to the guards of order in Kislovodsk, and the case of Irina’s kidnapping came to court. But the local judge did not want to spoil relations with the famous kefir magnate and begged Irina to forgive him. She forgave, but in exchange for 4.5 kg of dry kefir grains.
And very soon the first batch of medicinal kefir arrived at the Botkin Hospital in Moscow, and a couple of months later it was already sold in stores.
Which kefir is healthy?
For the kefir diet to be successful, you need to use 1% kefir (40 kcal per 100 g). Its properties are the same as those of 2.5% (55 kcal per 100 g), and its fat content and calorie content are lower, which, of course, is to our advantage.
In Russia, kefir production is controlled by an interstate standard (GOST), according to which 100 g of a quality product must contain:
- 2.8 g protein;
- from 0.5 to 8.9% fat.

In addition to regular kefir, you can and even need to prepare various kefir cocktails to make the weight loss process more effective. In addition, you can drink such cocktails while sticking to your classic, non-diet menu.
Kefir with cinnamon and ginger
To prepare this fat-burning cocktail, you will need:
- 200 ml kefir 1%;
- 1 teaspoon cinnamon;
- a pinch of red hot pepper;
- 2 teaspoons chopped ginger root.
Kefir with secret
The secret of such kefir lies in your imagination. You can add anything: cucumber, herbs, oatmeal, fruit, dried fruit. The ingredients can be ground in a blender, or you can simply cut them and add them to kefir. Here you can experiment as you please, the main thing is with permitted and compatible products.
Curd

In the first place among the products that are prohibited during both the kefir diet and the classic non-diet diet are carbonated drinks: they change the acid-base balance of the body, so consuming kefir will be useless, if not dangerous, in such a combination.
Eliminate white bread and replace with whole grain or cereal bread. Within a week you will notice external transformations of your skin, and after 2 months you will notice changes in your figure.

You will need:
- 300 ml kefir 1% fat;
- 100 g raisins;
- 300 g oatmeal;
- 20 g butter;
- 2 tablespoons honey;
- a pinch of cinnamon;
- a pinch of vanilla.
First, prepare the oatmeal: pour the flakes into a deep bowl and pour kefir over it for 40 minutes to swell it. Next, pour boiling water over the raisins for 20 minutes to soften them, dry the raisins with a napkin. When the oatmeal is ready, add raisins, cinnamon, vanilla, honey and mix thoroughly.

You will need:
- 500 ml kefir 1% fat;
- 1 cup flour (oatmeal, buckwheat or rye);
- 3 tablespoons honey;
- 2 chicken eggs;
- a pinch of salt;
- ½ teaspoon of soda.

Go for a jog or walk, and then drink a glass of kefir and return to the diet with the condition that you extend it for another day.
In addition, on 5, 9 and 21-day kefir diets, you can give yourself a so-called “cheat mill”: a pre-planned day when you can allow yourself a little weakness, be it a piece of chocolate, sausage, a handful of chips - something that you really want you love it, but because of your diet you give it up. But such days cannot be organized often. If you lose weight for 5 and 9 days, then there will be only one “cheat mill”, but if it is 21 days, then there will be no more than three such days.
